When I was a little boy, my mom used to serve wonderful treats (like pancakes, waffles, muffins, ginger bread, banana bread, monkey bread and pound cakes to name a few) with regularity for breakfast, dinner and dessert. She never told me, because she didn’t know, that eating these sugary treats would contribute to the development of a habitual diet that resulted in becoming prediabetic. As a teenager in junior and senior high school, the starchy and sugary cafeteria lunches served there didn’t help matters. And while I ate out with friends at fast-food restaurants almost daily after school, burgers, super-sized French fries and milkshakes became my go-to daily snack diet. At home in the afternoons before dinner and my parents came home, I often gorged on several bowls of sugary cereals, adding even more cane sugar to the leftover milk from each bowl of cereal I had just eaten.

After I entered college, with the freedom and independence to do as I wanted, my poor eating habits escalated into daily binges on pastries, cookies, donuts and candy bars along with the hot dogs and pizza I had for lunch and dinner, and a constant snack routine of potato and corn chips. Shortly thereafter, I was introduced to vegetarianism and more healthy eating options. But, as this new lifestyle choice took hold over time, I ate more carbs to fill the absence of meat. Resulting effects have included brain fog, fatigue, constipation, insomnia and some neuropathy. While, in recent years, I have maintained a fairly healthy and balanced pescatarian diet, I still fall into the old food addictions of snacking on an excessive amount of sugary and starchy foods from time to time.

With the onset of prediabetes and inspired to elevate my health regimen, I began taking supplements and browsing YouTube videos on the subject of health and better nutrition. That’s when I stumbled upon this phenomenal YouTube video interview with French biochemist Jessie Inchauspé.
